I think I have finally found that one perfect comfort food recipe for a crazy, cold weeknight meal. After a lot of trial and error, I have landed on the ultimate soup recipe that warms the body all the way upto those toes and your soul. Truly comforting and amazingly delicious. The cherry on top – super easy to make. I will be trying out versions of this soup over time, but for now here is the basic recipe.

Ricotta Gnudi Soup 

Ingredients –

For the dumplings –

2 cups ricotta cheese ( you could substitute this with either goat cheese or indian paneer that has been mashed very well)

1/4 cup of parmesan or any other cheese grated

salt to taste

pepper to taste

1 tsp of italian seasoning mix

a few tbsps of flour (all purpose)

For the soup 

1 large onion – finely chopped

2 garlic pods – finely chopped

4 cups vegetable stock

1 can of whole tomatoes with basil ( I use cento)

2 tbsp of flour

2 tbsp olive oil

salt and pepper to taste

1 tbsp – italian seasoning mix


In a large pot add oil and flour and mix till the flour is cooked. Add the onions and garlic and cook till translucent. Blend the tomatoes till they are pureed and add it to the onions. Add the tomato juice and vegetable stock and bring it to a rolling boil. Then lower the heat and let it simmer covered.

Bring a pot of water to boil.Mix the ricotta cheese, parmesan,salt, pepper and herbs. Add flour a little at a time and make dumplings. Roll the dumplings in flour add to the boiling water. When the dumplings float to the top they are cooked. Remove with a slotted spoon and put it into an ice bath to cool and set. Once cooled add the dumplings to the soup. Garnish with parmesan and basil chiffonade and enjoy!

Ricotta Gnudi Soup


1. Make sure not to add too much flour to the cheese. Too much flour will make the dumpling chewy. We want a light, fluffy finish to the dumpling.

2. If making dumplings with paneer, bake the dumplings do not add them to water.

3. Make sure to not crowd the pot of boiling water with dumplings.

4. If you want to make this more nutritious, add sauteed veggies to the ricotta cheese mix. You could also add vegetables to the soup.
