This is a pretty special Super Bowl for anyone living in Denver – whether you are a football fan or not, whether you support the Broncos or not – we are all United In Orange!! This year I wanted to give my finger food an Indian twist so I settled on this dish. This is a very common appetizer in the western part of India and the state of Maharashtra where i grew up. It’s simple to make, delicious and healthy!
Cilantro – washed and finely chopped – 1 bunch/ 1 cup
Chickpea flour ( besan/ gram flour) – 1 cup
Oregano seeds / ajwain -1/2 tsp
Finely chopped green chilly ( optional)
Red chilly powder – 1/2 tsp
Coriander powder- 1/2 tsp
Cumin powder-1/2 tsp
Turmeric – 1/2 tsp
Salt to taste
Garlic paste – 1/2 tsp
Sugar -1 tsp
Dry mango powder/ chaat masala – 1/2 tsp( optional)
Baking soda – 1/2 tsp
Mix all ingredients except water and let it stand for about 10 mins. Then add the water and make a thin batter. It should be a little thinner than pancake batter. Grease a pan and steam this batter. I use a pressure cooker to steam the batter. Steam it without the whistle in a pressure cooker on high for 15-20 mins or until a knife inserted comes out clean. Let cool. Cut into small diamond shapes and shallow fry in a pan with 2 tbsp of oil till all sides are crunchy. Serve hot with the mint cilantro chutney or even the apricot chutney for a contrast!
